Atlantic cod fillets have a silvery, subcutaneous layer that distinguishes them from Pacific cod. The lean meat has a mild, clean flavor and large, tender flakes. Raw Atlantic cod is translucent, ranging from white to pinkish. Raw Pacific cod is opaque, creamy white.
