Halibut

The Pacific Halibut is the largest of the flatfish, and one of the tastiest for this reason. Halibut is an extremely versatile fish, and the thick, meaty flesh holds up well to a number of cooking methods and sauces. It’s ideal for skewering as kebabs, baking is a great alternative as it is hard to over cook unlike most fish.
