Squid

Calamari, Calamari…CALAMARI. Not to be confused with Octopus. Squid is what we use for Calamari. There are over 300 species found in today’s ocean. They are amazing additions to many stir fried dishes and fried dishes. They are found in more isolated land cuisine areas vs land locked. Cuisines like Pacific Islands, Japanese, Indonesian, Southern Italy, Sicily etc.

The body and mantle can be stuffed like a chicken when cooked, the tentacles and even the ink can be edible. The ink can be seen in various Italian pasta dishes to help give flavor and color(dark).
